shanskitchen > We are making one of CJ's holiday favorites! Peanut Brittle Grandpa's favorite! This turned out to be one of C.J.’s favorites on Thanksgiving ’99! 2 cups sugar 1 cup light corn syrup ½ cup water 1 cup unsalted butter- cut into pieces 2 cups (12.5 oz can) unsalted, dry roasted peanuts or Raw Spanish peanuts 1 teaspoon baking soda In 3-quart saucepan over medium heat, heat together sugar, corn syrup and water, stirring till sugar dissolves. When syrup boils,about 8-12 minutes, blend in butter. Stir frequently after temperature reaches 230°. Add peanuts when temperature reaches 280°; stir constantly to hard crack stage (305°). Remove from heat; quickly stir in soda, mixing well. Pour onto two cookie sheets that have been sprayed with Baker’s Joy. Spread evenly to about ¼ inch thick. Move Quickly! Loosen from pans when hard. Break into pieces. Freezes well. Yield: 2 ¼ pounds Mom’s Tips: Mom likes to use a candy thermometer made by Taylor. (clips onto the pan)
